These classic blueberry muffins are a delightful way to enjoy the burst of flavour from Riverfarm’s fresh, organic blueberries. Light, fluffy, and packed with juicy berries, these muffins are perfect for breakfast, snacks, or a sweet treat any time of day.
Ingredients:
- 1 ½ cups fresh Riverfarm blueberries
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup butter, melted
- ½ cup milk
- 2 large eggs
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract
- Optional: sugar for sprinkling on top
Instructions:
- Preheat Oven: Preheat your oven to 190°C (375°F). Line a muffin tin with paper liners or grease with a bit of butter.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
- Mix Wet Ingredients: In another bowl, combine the melted butter, sugar, eggs, milk, and vanilla extract until smooth.
- Combine Ingredients: Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries, being careful not to overmix.
- Fill Muffin Tins: Scoop the batter into the prepared muffin tin, filling each about ¾ full. Sprinkle a little sugar on top of each muffin for a slightly crunchy top, if desired.
- Bake: Bake for 20-25 minutes or until a toothpick inserted into the centre comes out clean.
- Cool and Enjoy: Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy with a cup of tea or coffee!
