Classic Blueberry Muffins

These classic blueberry muffins are a delightful way to enjoy the burst of flavour from Riverfarm’s fresh, organic blueberries. Light, fluffy, and packed with juicy berries, these muffins are perfect for breakfast, snacks, or a sweet treat any time of day.

Ingredients:

  • 1 ½ cups fresh Riverfarm blueberries
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup butter, melted
  • ½ cup milk
  • 2 large eggs
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract
  • Optional: sugar for sprinkling on top

Instructions:

  1. Preheat Oven: Preheat your oven to 190°C (375°F). Line a muffin tin with paper liners or grease with a bit of butter.
  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
  1. Mix Wet Ingredients: In another bowl, combine the melted butter, sugar, eggs, milk, and vanilla extract until smooth.
  1. Combine Ingredients: Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries, being careful not to overmix.
  1. Fill Muffin Tins: Scoop the batter into the prepared muffin tin, filling each about ¾ full. Sprinkle a little sugar on top of each muffin for a slightly crunchy top, if desired.
  1. Bake: Bake for 20-25 minutes or until a toothpick inserted into the centre comes out clean.
  1. Cool and Enjoy: Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy with a cup of tea or coffee!
